Herby Rustic Chips

Ingredients
1kg/2lb potatoes – even sized
100 ml vegetable oil
1tbsp oregano
1tbsp cumin
1tsp celery salt
Method
- Pre heat oven to 200˚C / Gas Mark 6.
- Cut each potato into eight wedges, skin on, and blanch in boiling water for four minutes. The water should be at a rolling boil.
- Drain through a colander and allow to cool.
- Put the spices into a large bowl and add the potatoes and toss in the spices to coat evenly.
- Add the oil and coat the potato. Place on an oven tray and cook for 45 minutes.
- Serve hot from the oven.
A great healthy option with added spicy bite – perfect with fish.
